Carob Slice

1 cup coconut
1 cup plain flour
1/2 cup brown sugar
2 tablespoons carob powder
3 crushed Weet-Bix
125g block of copha, melted

Mix dry ingredients together.
Add copha, mix well.
Spread into a foil lined 23cm lamington tray.
Bake in moderate oven for 15 - 20 minutes or until brown.

6 rounded tablespoons cornflour
2.5 tablespoons carob powder
5 cup vanilla soy milk
2 tablespoons honey

In medium saucepan, blend cornflour and carob powder with 1 cup soy milk.
Add 4 cups vanilla soy milk.
Can use plain soy milk if extra vanilla and sweetening are used.
Heat stiring continually until mixture boils and thickens.
Add 4 tablespoons honey (less if using vanilla soy milk).
Bring back to boil.
Pour over base and sprinkle liberally with coconut.
Refridgerate till set.
