Cauliflower Soup


2 tablespoons olive oil
2 onions chopped
2 carrots thinly sliced
1 cauliflower, divided into flowerets
3 potatoes peeled and sliced finely
1 litre vegetable stock

Place olive oil in large saucepan & heat.
Add onion & saute for 5 minutes.
Add remaining vegetables and cook for a few minutes longer.
Pour in the stock and simmer until vegetables are tender.
Blend the soup and place it back in the saucepan
