Fruity Bars

2 cups chopped dates
1 cup currants
1 cup raisins
1 cup dark grape juice
2 tablespoons lemon juice
1/4 teaspoon salt

Place all ingredients into a medium saucepan and simmer over low heat until soft.

3 cups quick oats
1 cup rolled oats
1 cup coconut
1 cup unbleached white flour
1 teaspoon coriander
1/2 teaspoon cardamon
3/4 cup oil
1/2 cup soya milk or water
1/4 cup honey or 1/2 cup brown sugar

Mix together dry ingredients.
Place oil, soya milk and honey in a saucepan, and warm until honey is melted.
Beat with a whisk then mix into dry ingredients. If too dry, add a little more liquid.
Press half the mixture (or a little more than half) into a Glad Bake lined lamington tray.
Spread fruit mixture over base, sprinkle the remaining oat mixture over fruit mixture, and press lightly into fruit.
Bake at 170 degrees Celcius for 30 minutes, or until golden brown.
Cool, and cut into bars.
