Lemon Cream Pie

Cashew Cream
3/4 cup cashew pieces
3/4 cup soy milk
1 tablespoon honey
1 teaspoon vanilla

Blend all ingredients until very smooth

Pie Mixture
1 pre-baked pie shell
3 cups unsweetened pineapple juice
1/2 cup orange juice
6 tablespoons cornflour
6 tablespoons honey
2 tablespoons oil
1/2 teaspoon salt
3 teaspoons grated lemon rind
1/4 cup lemon juice

Blend all ingredients except the pie shell.
Cook over medium heat stirring constantly until thick.
Allow to cool a little.
Pour half of the mix into a pre-baked pie shell.
Mix the cashew cream in with the other half of the mix.
Allow the first layer to cool.
Spoon the rest of the cream mix on top of the pie.
Decorate with kiwi fruit and strawberries.
Chill well.
